Brown Stew Fish Recipe
Ingredients
- 3 lbs fish
- 1 large onions
- 3 chopped scallions
- 3 cloves garlic, minced
- 1 chopped green pepper
- ½ tsp. ground allspice
- 3 tomatoes, chopped
- 2 sprig fresh thyme
- 2 cups water
- scotch bonnet pepper to taste
- salt and pepper to taste
- 1 cup Oil

Cooking Directions
- 1. Clean and rinse fish well with water and lime juice
- 2. Dry and marinate with desired seasoning (example salt and pepper)
- 3. Set aside and marinate for 1/2 - 2 hours
- 4. Heat oil in a large skillet over medium heat.
- 5. Add the fish to the skillet and brown on both sides
- 6. Remove the fish
- 7. Pour off the excess oil.
- 8. Return the skillet to the stove top, reduce the heat to medium
- 9. Add onions, garlic, tomatoes, scotch bonnet, and thyme cook for about 5 minutes
- 10. Reduce the heat to low and add the fish
- 11. Cook until sauce is thickened.
