Jamaican Bun Recipe
Ingredients
- 11/2 oz margarine
- 3/4 cup brown sugar
- 2 tbsp. honey
- 1/2 cup stout
- 11/2 cups flour
- 11/2 tbsp. baking powder
- 1/2 mixed spice
- 1/2 tbsp. cinnamon powder
- 1 egg
- 4 tbsp. raisins
- 4 tbsp. currants
- 2 tbsp. mixed peel, finely chopped
Cooking Directions
- 1. In a saucepan, dissolve margarine, sugar, honey, and stout over low heat.
- 2. In a separate bowl, sift together flour, baking powder, and spices.
- 3. Add the egg and melted mixture to the dry ingredients.
- 4. Mix in dried fruit until well combined.
- 5. Pour the batter into a 9-inch by 4-inch loaf tin.
- 6. Bake on the center shelf at 350°F for approximately 45 minutes.
