- 1. Sift flour and salt together in a large mixing bowl.
- 2. Cut the butter and shortening into small pieces and add them to the flour mixture.
- 3. Add cold water to the flour mixture and mix until a dough forms.
- 4. Wrap the pastry dough in plastic wrap or foil and place it in the refrigerator for 30 minutes.

- 6. On a floured cutting board, roll out the pastry with a rolling pin to a thickness of ¼ inch.
- 7. Cut circles in the pastry using an 8-oz cup or glass, or use a cookie cutter to cut out circles.
- 8. You should be able to cut out 16 circles from the pastry.
- 9. Pinch and crimp the edges of each pastry circle to form a casing, which will hold the filling.
- 10. Ensure the crimping is done uniformly for a decorative effect.
- 11. Place the pastry casings on a greased baking tray.
- 12. Part-bake them in the oven at 350°F (175°C) for 15 minutes.
- 13. Remove the part-baked pastries from the oven.
- 14. Add the desired filling to each pastry casing.
- 15. Return the filled pastries to the oven and bake at 350°F (175°C) for another 20 minutes.
- 16. Once baked, remove the gizzadas from the oven and allow them to cool.
