Beef Soup Recipe

- 11/2 lb beef
- 1/3 lb carrot
- 1/3 lb cho cho (optional)
- 1 lb yellow yam (optional)
- 1 lb coco (optional)
- 1 lb Irish potato
- 1/2 lb pumpkin
- 1 package beef noodles
- 1 tsp salt
- 2 stalks scallion
- Flour for Dumpling (optional)
Cooking Directions
- 1. Boil the beef shank in a pot of water until the meat becomes tender.
- 2. Once the meat is tender, add in the chopped carrots, cho-cho (chayote), pumpkin, and Irish potatoes.
- 3. Allow the mixture to boil for an additional 10 to 20 minutes until the vegetables are cooked to your liking.
- 4. Next, add in slices of yellow yam and any desired seasoning to the pot.
- 5. Optionally, you can also add dumplings to the pot at this stage.
- 6. Let the soup simmer until it reaches a medium-bodied consistency.
- 7. This hearty soup recipe will serve 4 to 6 people. Enjoy!
