Prepare the Fish
- Clean the fish and season with salt and pepper.
Heat Oil
- Heat oil in a skillet over medium heat for 2-5 minutes.
- Add onion, scallion, thyme, pimento seeds, and tomatoes to the skillet. Sauté for about 5 minutes.
Steam the Fish
- Pour water into the skillet and stir.
- Place the seasoned fish on top of the sautéed ingredients.
- Add okra, cover, and steam for 10 minutes. Occasionally spoon some of the sauce over the fish.
Finish Cooking
- Gently turn the fish over to cook each side evenly.
- Add ketchup and butter to the skillet.
- Cover the skillet and continue to steam for another 7 to 10 minutes or until the fish is cooked through.
