Tamarind Drink Recipe
Ingredients
- 1 quart ripe unshelled tamarind
- 1 quart cup cold water
- 2 tsp. lime juice
- 1/2 tsp. grated fresh ginger root
- 1/2 cup brown sugar

Cooking Directions
- 1. Shell tamarind and remove veins. Soak in 1 quart cold water, until soft.
- 2. Rub through a sieve to get pulp off, using the water in which the tamarind was soaked.
- 4. Add lime juice, grated ginger root and sugar to sweeten. Strain.
- 5. To Serve: For a plain drink chill and serve, for a bubbly foamy drink add about 1/4 teaspoon bicarbonate of soda and serve.
