Rock Cake Recipe
Ingredients
- 8 oz sugar
- 4 oz butter
- 2 eggs
- 3 ½ cup flour
- 2/3 cup milk
- 2 cups coconut (grated)
- 1 ½ tsp baking powder
- 1 tsp vanilla
- 1 tsp almond extract
Cooking Directions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a large bowl, mix together the sugar, flour, coconut, and baking powder.
- 3. Melt the butter and add it to the dry ingredients, stirring to combine.
- 4. In a separate bowl, beat the eggs, then mix in the vanilla extract, almond extract, and milk.
- 5. Add the wet ingredients to the dry ingredients, mixing until fully combined.
- 6. Drop spoonfuls of the mixture onto a greased baking sheet to form balls, or pour the mixture into a greased loaf pan.
- 7. Bake in the preheated oven for 1 ¼ hours, or until golden brown and a toothpick inserted into the center comes out clean.
