Jamaican Banana Bread Recipe
Ingredients
- 1/3 cup butter
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg, well-beaten
- 2 ripe bananas, mashed
- 1/2 cup raisins
- 2 cups all-purpose flour
- 3 tsp baking powder
- A pinch of salt
- 1/4 tsp nutmeg
Cooking Directions
- 1. Preheat the oven to 350°F (175°C).
- 2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
- 3. Add the beaten egg and vanilla extract, stirring until combined.
- 4. Mash the ripe bananas in a separate bowl.
- 5. In another bowl, sift together the flour, baking powder, salt, and nutmeg.
- 6. Gradually fold the dry ingredients and mashed bananas into the creamed mixture until just combined.
- 7. Fold in the raisins. If the batter is too thick, add a little milk to adjust the consistency.
- 8. Pour the batter into a greased loaf pan.
- 9. Bake for about 60 minutes or until a skewer inserted in the center comes out clean.
- 10. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
