Jamaican Oxtail Recipe
Ingredients
- 3 lb oxtail, trimmed
- 1 onion, sliced
- 1 green pepper, chopped
- 1 tomato, chopped
- 1 scotch bonnet pepper, chopped
- 3 garlic cloves, minced
- 6 cups hot water
- 1 sprig thyme
- Salt and black pepper to taste
Cooking Directions
- 1. Wash and clean the oxtail thoroughly.
- 2. Season the oxtail with salt, black pepper, and garlic.
- 3. Brown the oxtail in a large pot with a little oil, then drain the excess oil.
- 4. Add hot water (about 4 cups) to the pot with the browned oxtail and bring to a boil.
- 5. Add thyme, onions, tomato, and green pepper; simmer on low heat until the oxtail is tender (approximately 2-3 hours).
- 6. Optional: Add red kidney beans or dumplings during the last 30 minutes of cooking for extra heartiness.
- 7. Adjust seasoning and water levels as needed; serve hot.
