Jamaican Brown Stew Fish

Savor a true home-style Jamaican classic. Tender snapper or kingfish is lightly fried, then simmered in a brown gravy with onion, thyme, Scotch bonnet, and tomatoes for deep, balanced flavor.

Ingredients

  • 3 lb fish (snapper or kingfish), cleaned
  • 1 large onion, sliced
  • 3 scallions, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1/2 tsp ground allspice
  • 3 tomatoes, chopped
  • 2 sprigs fresh thyme
  • 2 cups water
  • Scotch bonnet pepper, to taste
  • Salt and black pepper, to taste
  • 1 cup oil (for frying)
  • Lime juice, for rinsing

Directions

  1. Rinse fish with water and a little lime juice. Pat dry.
  2. Season with salt, black pepper, and your preferred seasoning. Marinate 30 minutes to 2 hours.
  3. Heat oil over medium. Brown fish on both sides. Remove and set aside.
  4. Discard excess oil. Sauté onion, garlic, tomatoes, Scotch bonnet, and thyme for about 5 minutes.
  5. Return fish, add water as needed, reduce heat, and simmer until the gravy thickens and flavors come together.

Tips and Serving

Add a pinch more allspice if you like a warmer note. Control heat with the Scotch bonnet by using whole pepper for less heat or chopped for more.

Serve with rice and peas, boiled green banana, or fried dumplings.
