Gungo Peas (Pigeon Peas) Soup

Ingredients

  • 1 lb salted pig tail
  • 1 lb stewing beef, cubed
  • 2 cups gungo peas (green or dried)
  • 4 qt water
  • 4 small potatoes, peeled and cubed
  • 1 sprig fresh thyme
  • Hot pepper, to taste
  • Optional: Yam, peeled and cubed
  • Optional: Dumplings
  • Salt, to taste

Directions

  1. Combine salted pig tail, stewing beef, and gungo peas in a large pot. Cover with boiling water.
  2. Simmer 60 to 90 minutes until peas are tender and beginning to split.
  3. Add potatoes, thyme, and hot pepper. If using, add yam and dumplings now.
  4. Season with salt and additional pepper as desired.
  5. Simmer 45 to 60 minutes more, stirring occasionally, until rich and hearty.

Tips and Tricks

Soak or parboil salted pig tail to reduce salt before cooking.

Use green gungo for a fresher taste or dried gungo for deeper flavor.
