Hearty Jamaican Beef Soup Recipe

Ingredients

  • 1 1/2 lb beef shank, cut into chunks
  • 1/3 lb carrots, chopped
  • 1/3 lb cho cho (chayote), peeled and cubed (optional)
  • 1 lb yellow yam, sliced (optional)
  • 1 lb coco, peeled and cubed (optional)
  • 1 lb Irish potatoes, diced
  • 1/2 lb pumpkin, cubed
  • 1 package beef noodles
  • 1 tsp salt, or to taste
  • 2 stalks scallion, chopped
  • Flour for dumplings (optional)

 

Directions

  1. Begin by boiling the beef shank in a large pot of water until the meat is tender.
  2. Add the chopped carrots, cho cho, pumpkin, and Irish potatoes and continue boiling for 10–20 minutes until the vegetables soften.
  3. Stir in the slices of yellow yam and adjust the seasoning as needed.
  4. If desired, gently drop in dumplings made with flour.
  5. Allow the soup to simmer until it reaches a rich, medium-bodied consistency.
