Jamaican Brown Stew Chicken

A classic Jamaican dish where chicken is fried until golden, then simmered in a rich gravy with onion, scallion, and sweet pepper until tender and flavorful.

Ingredients

  • 2 lbs chicken, cut into pieces
  • 3 Tbsp soft margarine
  • 1/2 cup vegetable oil
  • 1 tsp salt
  • 1/2 cup chopped onion
  • 2 stalks scallion, chopped
  • 1 sweet pepper, sliced

Directions

  1. Clean and dry the chicken pieces thoroughly.
  2. In a heavy pot, heat the oil and margarine, then fry the chicken until well browned on all sides.
  3. Add salt, onion, scallions, and sweet pepper. Pour in enough water to cover the chicken.
  4. Cover and simmer slowly until chicken is tender and gravy thickens.

Tips and Serving

Traditionally served with rice and peas, fried dumplings, or boiled provisions. Add thyme and Scotch bonnet for a more authentic flavor.
