Jamaican Curry Goat

Curry Goat is one of Jamaica’s most popular dishes, combining tender goat meat with curry powder, thyme, pimento, and Scotch bonnet pepper for a rich, flavorful stew.
Ingredients
- 3 lbs goat meat, cut into bite-sized pieces
- 1 large onion, sliced
- 2 cloves garlic, chopped
- 1 Scotch bonnet pepper, whole or chopped
- 4 oz Jamaican curry powder
- 1 oz cooking oil
- 1 oz ground black pepper
- 2 tbsp salt
- 4 sprigs thyme
- 1/2 oz vinegar
- 6 pimento seeds (allspice)
Directions
- Wash the goat meat with vinegar and water. Rub in seasonings and refrigerate for 1 hour.
- Remove meat, rinse off excess seasoning, and set aside.
- Heat oil in a pot and sear the goat meat until browned.
- Add 1 cup water and stir until meat begins to contract.
- Reduce heat, add 2 more cups water, cover, and simmer 20 minutes. Stir occasionally.
- Return seasonings to the pot and simmer another 15 minutes until goat is tender.
