Jamaican Curry Goat

Curry Goat is one of Jamaica’s most popular dishes, combining tender goat meat with curry powder, thyme, pimento, and Scotch bonnet pepper for a rich, flavorful stew.

Ingredients

  • 3 lbs goat meat, cut into bite-sized pieces
  • 1 large onion, sliced
  • 2 cloves garlic, chopped
  • 1 Scotch bonnet pepper, whole or chopped
  • 4 oz Jamaican curry powder
  • 1 oz cooking oil
  • 1 oz ground black pepper
  • 2 tbsp salt
  • 4 sprigs thyme
  • 1/2 oz vinegar
  • 6 pimento seeds (allspice)

Directions

  1. Wash the goat meat with vinegar and water. Rub in seasonings and refrigerate for 1 hour.
  2. Remove meat, rinse off excess seasoning, and set aside.
  3. Heat oil in a pot and sear the goat meat until browned.
  4. Add 1 cup water and stir until meat begins to contract.
  5. Reduce heat, add 2 more cups water, cover, and simmer 20 minutes. Stir occasionally.
  6. Return seasonings to the pot and simmer another 15 minutes until goat is tender.

Tips and Serving

Serve with white rice, rice and peas, or boiled provisions. Allow to simmer longer for richer gravy. Scotch bonnet can be adjusted for heat.
