Authentic Jamaican Easter Bun Recipe

Ingredients

  • 1½ oz margarine
  • ¾ cup brown sugar
  • 2 tbsp honey
  • ½ cup stout
  • 1½ cups flour
  • 1½ tbsp baking powder
  • ½ tsp mixed spice
  • ½ tbsp cinnamon powder
  • 1 egg
  • 4 tbsp raisins
  • 4 tbsp currants
  • 2 tbsp finely chopped mixed peel

Directions

  1. Melt margarine, brown sugar, honey, and stout in a saucepan over low heat. Allow to cool slightly.
  2. Sift flour, baking powder, and spices in a large bowl.
  3. Add melted mixture and egg to dry ingredients. Stir until combined.
  4. Mix in raisins, currants, and chopped mixed peel.
  5. Preheat oven to 350°F (175°C). Grease a 9x4 inch loaf tin.
  6. Pour batter into prepared tin and bake on center shelf for 45 minutes.
  7. Cool in tin for a few minutes before transferring to a wire rack. Slice and enjoy.
