Jamaica Festival Recipe

Ingredients

  • 1 1/2 cups flour
  • 1/2 tbsp salt
  • 3/4 tbsp baking powder
  • 3 tbsp cornmeal
  • 2 1/2 tbsp brown sugar
  • 1/2 tbsp vanilla essence
  • 3/4 cup water
  • Oil for frying

  1. Sift together the flour, salt, and baking powder. Add cornmeal and brown sugar.
  2. Mix vanilla with water and add gradually to dry ingredients to form a soft dough. Cover and rest for 30 minutes.
  3. Divide dough into 8 equal portions. Roll each into 6-inch by 1.5-inch lengths, about 1/8 inch thick.
  4. Heat oil in a pan and fry until golden brown. Pierce with fork while frying. Serve hot.
