Jamaica Festival Recipe

Ingredients
- 1 1/2 cups flour
- 1/2 tbsp salt
- 3/4 tbsp baking powder
- 3 tbsp cornmeal
- 2 1/2 tbsp brown sugar
- 1/2 tbsp vanilla essence
- 3/4 cup water
- Oil for frying
Directions
- Sift together the flour, salt, and baking powder. Add cornmeal and brown sugar.
- Mix vanilla with water and add gradually to dry ingredients to form a soft dough. Cover and rest for 30 minutes.
- Divide dough into 8 equal portions. Roll each into 6-inch by 1.5-inch lengths, about 1/8 inch thick.
- Heat oil in a pan and fry until golden brown. Pierce with fork while frying. Serve hot.
