Jamaican Mackerel Rundown

Mackerel Rundown is a traditional Jamaican dish where salted mackerel is simmered in coconut milk with onion, scallion, tomato, thyme, and Scotch bonnet. The coconut reduces into a rich sauce that coats the fish.

Ingredients

  • 2 lbs salted (pickled) mackerel
  • 2 cups coconut milk
  • 1 cup water
  • 1 large onion, finely chopped
  • 2 stalks scallion, chopped
  • 2 large tomatoes, chopped
  • 2 sprigs thyme
  • 1 small Scotch bonnet pepper
  • Black pepper, to taste

Directions

  1. Soak mackerel overnight or boil for 20 minutes to remove salt.
  2. Drain and cut into small pieces.
  3. Boil coconut milk and water until oily.
  4. Add mackerel, cover, and cook 10–12 minutes.
  5. Add onion, scallion, tomatoes, Scotch bonnet, and thyme.
  6. Season with black pepper and simmer 10–15 minutes.

Tips and Serving

Serve hot with boiled yam, dumplings, banana, or rice. Adjust Scotch bonnet pepper for desired spice level.
