Jamaican Stew Oxtail

Ingredients

  • 3 lb oxtail, trimmed
  • 1 onion, sliced
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 1 scotch bonnet pepper, chopped
  • 3 garlic cloves, minced
  • 1 sprig thyme
  • 6 cups hot water
  • Salt and black pepper to taste

Directions

  1. Wash and clean the oxtail thoroughly.
  2. Season with salt, black pepper, and garlic.
  3. Brown the oxtail in a large pot with a little oil, then drain excess oil.
  4. Add 4 cups hot water, bring to a boil.
  5. Add thyme, onions, tomato, and green pepper; simmer 2–3 hours until tender.
  6. Optional: Add beans or dumplings in the last 30 minutes.
  7. Adjust seasoning as needed; serve hot.
