Jamaican Stew Peas

Ingredients

  • 2 cups red kidney beans (red peas)
  • 1 lb salted beef
  • 1 lb salted pig tail
  • 1 Scotch bonnet pepper
  • 2 stalks scallion
  • 3 sprigs thyme
  • 2 cups coconut milk
  • 6 pimento seeds
  • Salt and pepper to taste

Directions

  1. Boil salted beef and pig tail twice, draining after each boiling.
  2. Add red peas, boiled meat, and pimento seeds; boil until peas are tender (about 1.5 hrs).
  3. Add coconut milk, scallion, thyme, and spinners. Simmer for 1 hr until stew thickens.
  4. Season with salt and pepper, add Scotch bonnet for flavor, and cook to desired consistency. Serve with rice.

Use fresh coconut milk for a richer taste. Adjust pepper level to suit your spice tolerance.
