Jamaican Stew Peas

Ingredients
- 2 cups red kidney beans (red peas)
- 1 lb salted beef
- 1 lb salted pig tail
- 1 Scotch bonnet pepper
- 2 stalks scallion
- 3 sprigs thyme
- 2 cups coconut milk
- 6 pimento seeds
- Salt and pepper to taste
- Spinners (dumplings)
Directions
- Boil salted beef and pig tail twice, draining after each boiling.
- Add red peas, boiled meat, and pimento seeds; boil until peas are tender (about 1.5 hrs).
- Add coconut milk, scallion, thyme, and spinners. Simmer for 1 hr until stew thickens.
- Season with salt and pepper, add Scotch bonnet for flavor, and cook to desired consistency. Serve with rice.
