Jamaican Christmas Cake (Fruit Cake / Rum Cake)

The Jamaican Christmas Cake, also known as Fruit Cake or Rum Cake, is a rich dessert baked during the festive season. It combines butter, sugar, eggs, and flour with mixed dried fruits soaked in rum.
Ingredients
- 1 lb butter or margarine, softened
- 1 lb dark brown sugar
- 12 eggs
- 1 lb flour
- 2 tsp vanilla extract
- 2 tsp baking powder
- 2 tsp baking soda
- Cinnamon and nutmeg, to taste
- 1/3 cup rum
- 2 cups mixed fruit (diced)
- 1 lb prunes
- 1 lb raisins
- 1 lb currants
- 1 lb cherries
Directions
- Cream the butter and sugar until pale yellow.
- Add eggs gradually and stir in vanilla extract.
- Sift flour, baking powder, baking soda, cinnamon, and nutmeg. Fold into mixture.
- Add fruits, prunes, raisins, currants, and cherries. Mix well.
- Pour into greased cake tins. Drizzle rum on top.
- Bake at 350°F (175°C) until a toothpick comes out clean. Cool before serving.
