Jamaican Beef Patty

Ingredients
- Pastry dough
- 12 oz ground beef
- 2 tbsp oil
- 1 sprig thyme
- 3 stalks scallion, chopped
- 1 small hot pepper, finely chopped
- 4 slices bread, soaked and pureed
- 1½ cups water
- 1½ tbsp salt
- ½ tbsp black pepper
- 2 egg yolks or ½ cup milk (for glazing)
Directions
- Prepare pastry dough and chill.
- Brown beef with thyme in oil, add scallion and pepper.
- Mix in bread puree, season, and cook briefly.
- Roll out pastry, cut into circles, fill with beef mixture.
- Seal edges, glaze, and bake at 450°F for 25 minutes until golden.
