Jamaican Roast Fish

Roast Fish is a popular Jamaican dish where fresh fish is seasoned with herbs and Scotch bonnet pepper, wrapped in foil, and roasted on a grill or in the oven.

Ingredients

  • 2 lb fresh fish
  • 1 tsp paprika
  • 1 Scotch bonnet pepper
  • 3 tsp butter
  • 1 small onion
  • 1 sprig thyme
  • 3 stalks scallions
  • Salt and pepper to taste

Directions

  1. Clean fish with lime and hot water, then pat dry.
  2. Season fish with paprika, salt, and pepper. Add butter, onion, thyme, scallion, and Scotch bonnet.
  3. Wrap fish in foil.
  4. Grill or bake at 350°F (175°C) for 30–45 minutes until cooked through.
