Stinking Toe (Tinking Toe)

The "Stinking Toe" refers to the large seedpod of the West Indian Locust tree (Hymenaea courbaril), one of the Caribbean's most impressive trees. Resembling an oversized toe, this seedpod features a tough, brown exterior that can be difficult to crack.

Despite the strong, somewhat off-putting odor released by its mealy, pulp-covered exterior, the locust fruit inside offers a surprisingly delightful flavor. The interior is dry, hairy, and powdery with a yellow hue, while a smaller seed, mirroring the pod’s shape, is nestled within.

This unique contrast—an unpleasant aroma paired with a remarkably tasty flavor—has made the stinking toe a celebrated curiosity among adventurous food enthusiasts across the Caribbean.
