Mango Juice

Prep: 10 min · Blend: 1 min · Serves: 4

Ingredients

  • 3 firm, ripe mangos
  • 3 cups cold water
  • 1 fresh ripe pineapple
  • 3 juicy oranges
  • Additional fruits of your choice (optional)
Mango Juice

Cooking Directions

  1. Wash and peel the mangos, cut into chunks, and blend with water for about 30 seconds.
  2. Strain to remove excess pulp. Chill and serve.

Ginger Beer

Prep: 15 min · Makes: ~4 cups concentrate

Ingredients

  • ¼ lb. ginger root
  • 1 lb. sugar
  • ½ tsp. lime juice
  • 3 cups water
  • ½ cup crushed ice
  • Tools: Electric blender, bowls, fine mesh strainer

Cooking Directions

  1. Wash and chop ginger into small pieces. Blend with a little water to a pulp.
  2. Strain pulp through a fine strainer, squeezing well. Repeat with remaining pulp and water.
  3. Combine extracted ginger juice, sugar, and lime. Serve over ice or dilute to taste.

Caution: It’s strong and may burn a little. Dilute as needed.

Cucumber Juice

Prep: 10 min · Chill: 1 hr · Serves: 4

Ingredients

  • 6 cups coarsely chopped cucumber
  • 1 1/2 tbsp chopped root ginger
  • 6 cups water
  • 1 tbsp lime juice
  • 1 cup granulated sugar

Cooking Directions

  1. Blend cucumber, ginger, and water until smooth.
  2. Strain through a clean cloth. Stir in lime and sugar. Chill.

Cherry Juice

Prep: 10 min · Serves: 2–3

Ingredients

  • 2 cups fresh cherries (pitted)
  • 2 cups water
  • Granulated sugar, to taste

Cooking Directions

  1. Blend cherries with water until smooth.
  2. Strain, sweeten to taste, chill, and serve.

Otaheiti Apple Juice

Prep: 10 min · Simmer: 20 min · Serves: 6–8

Ingredients

  • 8 cups ripe Otaheiti apples (chopped, skin on)
  • 8 cups cold water
  • 1 cup granulated sugar
  • 2 tbsp chopped fresh ginger root
  • Juice of 3 limes

Cooking Directions

  1. Combine apples, water, sugar, ginger, and lime in a saucepan.
  2. Bring to a boil, then simmer 20 minutes.
  3. Strain, chill, and serve over ice.
