1. Sift 5 cups of flour into a large bowl.
2. Add a pinch of salt and rub in the shortening until the mixture resembles breadcrumbs.
3. In a small bowl, mix 1 tablespoon of sugar with the dried yeast, then pour warm water over it. Let stand for 10 minutes until bubbles form.
4. Stir the remaining sugar into the flour mixture.
5. Gradually add the yeast mixture, stirring until a soft, pliable dough forms.
6. Knead the dough thoroughly for about 10 minutes, adding more flour if necessary.
7. Divide the dough evenly between two greased 4" x 8" loaf tins.
8. Cover the tins lightly with a damp cloth and let the dough rise in a warm place until doubled in size (approximately 45-60 minutes).
9. Dissolve additional sugar in water to create a glaze, then brush the tops of the loaves with the glaze.
10. Place a small ovenproof bowl of hot water on the bottom rack of the oven to provide moisture.
11. Carefully place the loaf tins on the top shelf of a preheated 375°F oven and bake for 15-20 minutes until golden brown.
12. Remove the loaves from the oven and allow them to cool before serving.
