- 2 pounds sweet potato
- 1 1/2 cups dark brown sugar
- 1 cup flour
- 2 cups coconut milk
- 1 1/2 cups raisins
- 2 tsp vanilla
- 1 1/2 tsp grated fresh nutmeg
- 1 tsp mixed spice
- 1 tsp salt
- 1 tsp margarine or oil
1. Wash and Grate: Thoroughly wash and peel the sweet potatoes, then grate them finely.
2. Blend Dry Ingredients: In a bowl, combine the flour, mixed spice, salt, and grated nutmeg.
3. Mix with Potatoes: Add the dry ingredients to the grated sweet potatoes and mix until evenly distributed.
4. Incorporate Wet Ingredients: Stir in the dark brown sugar, coconut milk, raisins, and vanilla. Mix thoroughly to achieve a uniform batter.
5. Prepare Pan & Bake: Grease a baking pan and pour the batter into it. Bake in a preheated oven at 350°F (175°C) for 40-60 minutes, or until a toothpick inserted into the center comes out clean.
