Tamarind Drink Recipe
Ingredients
- 1 quart ripe, unshelled tamarind
- 1 quart cold water
- 2 teaspoons lime juice
- 1/2 teaspoon grated fresh ginger root
- 1/2 cup brown sugar

Cooking Directions
- 1. Shell the tamarind and remove any veins. Soak in 1 quart of cold water until softened.
- 2. Rub the soaked tamarind through a sieve to extract the pulp along with the soaking water.
- 3. Add lime juice, grated ginger, and brown sugar to the pulp, stirring well. Strain the mixture.
- 4. To serve, chill the drink for a refreshing plain beverage, or for a bubbly twist, stir in about 1/4 teaspoon of bicarbonate of soda before serving.
