Tripe and Bean Recipe - Authentic Jamaican Dish
Ingredients
- 2 lb tripe, cut into 1 to 1½ inch pieces
- 1/2 tbsp salt
- 1 can butter beans
- 1 onion, chopped
- 1 sprig thyme
- 2 stalks scallions, sliced
- 1/4 tbsp black pepper
- 1 ounce margarine
- 6 pimento grains
- 1/2 cup flour (for preparing spinners/dumplings)
Cooking Directions
- 1. Cut the tripe into pieces about 1 to 1½ inches long.
- 2. Add the tripe to a large pot of water along with half of the salt, black pepper, thyme, scallions, and pimento grains. Simmer until the tripe becomes tender.
- 3. Prepare small dumplings (spinners) using the flour and add them to the simmering pot.
- 4. Stir in the butter beans and margarine, then adjust seasonings as needed.
- 5. Allow the dish to simmer for a few more minutes until the flavors meld. Serve hot and enjoy a hearty taste of Jamaica.
