Jamaican Fruit Cake - Christmas Cake & Rum Cake
Ingredients
- 1 lb butter or margarine, softened
- 1 lb dark brown sugar
- 1 dozen eggs
- 1 lb flour
- 2 tsp vanilla extract
- 2 tsp baking powder
- 2 tsp baking soda
- Cinnamon and nutmeg, to taste
- 1/3 cup rum
- 2 cups mixed fruit (diced)
- 1 lb prunes
- 1 lb raisins
- 1 lb currants
- 1 lb cherries
Cooking Directions
- 1. Cream the butter and sugar in a large bowl until the mixture turns pale yellow.
- 2. Add eggs gradually (two at a time) and mix well after each addition. Stir in the vanilla extract.
- 3. Sift together the dry ingredients (flour, baking powder, baking soda, cinnamon, and nutmeg) in a separate bowl.
- 4. Slowly incorporate the dry ingredients into the butter-sugar mixture until fully combined; the batter will be quite heavy.
- 5. Fold in the mixed fruit along with prunes, raisins, currants, and cherries. Adjust the quantity to taste.
- 6. Pour the batter into well-greased and floured cake tins. Drizzle with rum.
- 7. Bake at 350°F (175°C) until a toothpick inserted into the center comes out clean. Allow to cool before serving.
